Makes 4
16 – 20 mint sprigs
1/2 c. sugar
Juice of 1 organic lemon
Juice of 1 organic orange
5 organic Granny Smith apples
2 limes
4 oz. Bacardi
4 c. club soda
2 limes
Peel, core and slice apples into quarters. Place in food processor with lemon and orange juices. Add sugar and blend until mixture is smooth and pureed.
In a tall glass, add 3/4 c. of the apple mixture plus 4 to 5 sprigs of mint. Using a muddler, crush the mint down into the glass. Add 1 c. club soda, juice of 1/2 lime, and 1 oz. Bacardi into each glass. Add ice and mix well. Serve cold.
