Prep time: 15 minutes, Serves 4
1 stick butter
1 Tbsp each fresh basil, tarragon & thyme, chopped
1 Tbsp lemon juice
1 tsp lemon zest
salt to taste
36 fresh large oysters, in the shell, scrubbed
Prepare a medium-hot fire in the grill. Melt butter in saucepan. Stir in herbs, garlic,
juice, zest, and salt to taste. Inspect oysters to make sure they are all tightly closed;
discard any oysters whose shells do not close to the touch. Place directly on grate.
Cover and cook until they open slightly; about 4 to 6 minutes. Using an oven mitt or
work glove to protect your hands, remove the top shells. Discard any unopened oysters.
Drizzle a little herb butter onto each oyster. Slurp and enjoy!
