Potatoes au Gratin with Irish Cheddar

TIP: Use a mandolin for the thinnest potato slices.
Prep Time: 15 minutes, Cook Time: 45 minutes, Serves: 6

vegetable cooking spray
2 lbs. organic new potatoes, thinly sliced
4-6 cloves garlic, minced
3 tbsp. Henry's Unsalted Butter, melted
1 c. Henry's Whole Milk
2 tsp. thyme
1/2 tsp. sea salt
1/4 tsp. freshly cracked black pepper
1 c. Irish cheddar Cheese, grated
1/3 c. panko-style breadcrumbs

Preheat oven to 425°F. Spray a shallow baking dish with cooking spray. Arrange potatoes in layers, sprinkling garlic between each layer. Season with thyme, salt and pepper. Pour milk and butter over the potatoes. Shaking the pan gently to evenly disperse the milk. Top with cheese and breadcrumbs. Cover with foil and bake for 30 minutes. Remove foil and bake for 15 minutes longer. Allow to rest for 10 minutes before serving.
