Roasted Asparagus

Enjoy a delicious taste of spring with this tempting recipe.
Prep Time: 5 minutes, Cook Time: 20 minutes, Serves 4 to 6

2 pounds asparagus
1 to 2 Tbsp Henry's Extra Virgin Olive Oil
salt and freshly cracked pepper to taste
1 lemon wedge
3 Tbsp toasted pine nuts
Parmigiano Reggiano cheese

Preheat oven to 400 degrees F. Wash asparagus and snap the ends off about one inch from the bottom. Arrange asparagus in one layer on a baking sheet. Drizzle with oil and toss to evenly coat. Roast for 20 minutes or until the spears are tender, stirring once. Place on a platter, garnish with a squeeze of lemon, pine nuts and cheese shavings.
