Serves: 4 (2 sliders each)
1 small red onion, finely chopped (about 1/4 cup)
1 clove garlic, minced
1 tsp. dried dill
1/2 tsp. Old BayŽ Seasoning
1/2 tsp. paprika
1 Henry's Market Organic Large Egg
3 Tbs. canola mayonnaise
1 tsp. Henry's Market Organic Dijon Mustard
2 Tbs. parsley, finely chopped
2/3 c. panko bread crumbs
juice and zest from one lemon
hot sauce to taste
salt and pepper to taste
2 to 3 c. cooked salmon
Henry's Market Whole Wheat Dinner Rolls
1 c. shredded green leaf or iceberg lettuce
Remoulade Sauce (see recipe below)
Place onion, garlic, dill, Old BayŽ Seasoning, paprika, parsley, eggs, mayonnaise and mustard in the food processor. Pulse until well mixed. Add bread crumbs, salmon, salt, pepper and hot sauce. Pulse until just mixed.
Form into 3-inch wide patties, about 3/4-inch thick. Press a light coating of panko bread crumbs on the top of each patty.
Heat a sauté pan over medium-high heat. Spray pan with vegetable cooking spray. Sear patties about 2 minutes per side, until golden and crispy.
Serve warm on toasted dinner rolls with shredded green leaf lettuce and a dollop of remoulade sauce.
Remoulade Sauce
Makes about 1 1/3 cups
1 c. canola mayonnaise
1/4 c. chili sauce
2 Tbs. Creole or Dijon Mustard
1 Tbs. extra virgin olive oil
hot sauce to taste
1 tsp. Worcestershire sauce
2 Tbs. minced parsley
3 green onion stalks, finely chopped
1 Tbs. chopped capers
1 clove garlic, minced
1/2 tsp. chili powder
juice and zest of one lemon
salt and pepper to taste
Whisk all the ingredients together. Adjust seasonings. Chill for at least an hour before serving. Keeps for up to one week in the refrigerator.
