1/4 pound Savory Sage County-Style Pork Sausage
3 strips of lean, smoked bacon, cut into small pieces
a few spins of the pepper mill
1/2 cup white onion, chopped into small pieces
1/2 cup celery, chopped into small pieces
4 Tbps. Granny Smith Apple, cored and chopped into small pieces
2 Tbsp. dried cherries (optional)
2 Tbsp. dried apricots (optional)
dash of sea salt
2 cups Organic Chicken or Vegetable Broth or turkey broth
2 cups or a one-pound box of herb croutons
Preheat oven to 375 degrees F. Heat a saucepan over medium high heat, add sausage, bacon and a few spins of the pepper mill. Cook and stir for about 2 minutes. Add the onions and celery and cook for about 2 to 3 minutes. Pour in the apples, cherries and apricots, reduce heat and cook for about 3 to 4 minutes. Sprinkle with a dash of sea salt. Stir in broth. In a separate bowl, add the croutons, pour the sausage and fruit mixture over the croutons and gently stir for about 20 seconds. Make sure the croutons have absorbed all of the liquid. Place in a baking dish, cover tightly and bake for 30 minutes.
