Seared Tuna with Citrus-Miso Vinaigrette

Add a little citrus sunshine to your plate with this easy, high protein meal in minutes. Add orzo or couscous and sautéed spinach for a complete meal.
Prep Time: 5 minutes, Cook time: 5 minutes, Serves: 4

3 Tbsp. fresh orange juice
2 Tbsp. fresh lemon juice
1 Tbsp. fresh lime juice
zest of one lemon
zest of one lime
1 tsp. Henry's Organic Dijon Mustard
2 Tbsp. honey
2 Tbsp. Henry's Organic Extra Virgin Olive Oil
1 Tbsp. yellow miso
4 (6-oz) tuna steaks, about 1-inch thick
1 Tbsp. Henry's Canola Oil
4 Tbsp. organic cilantro, finely chopped
4 c. organic spring greens, divided in to four serving

In a small bowl, whisk the first nine ingredients together. Set aside. Heat oil in a grill pan or heavy skillet over medium high heat. Add tuna and sear for two minutes on each side. The tuna with be cooked around the outside, leaving the inside rare. Cook longer for desired doneness. Slice and place tuna on greens. Drizzle with citrus vinaigrette and garnish with cilantro.
