Prep time 20 minutes, Serves 2
1 cup organic green bell peppers, sliced
1 cup organic red bell peppers, sliced
1/2 cup organic onions, sliced
5 oz. Hawaiian shrimp (about 15 shrimp)
Marinade:
2 Tbsp. Henry's Market Canola Oil
1/4 cup balsamic vinegar
1 Tbsp. oregano
1 Tbsp. parsley
1 Tbsp. flour
1 Tbsp. garlic powder
Salt & pepper, to taste
Serve with:
Diced Henry's Market Tomatoes
Shredded lettuce
Henry's Market Shredded Cheddar Cheese
Sliced avocados
Sour cream
Flour tortillas
In a medium sized bowl, mix all ingredients for marinade well, then set aside. In a large skillet, saute peppers and onions over medium heat in about 2 tablespoons oil. Add shrimp to skillet, cover with marinade, and cook for about 10 minutes.
Serve with warm flour tortillas, lettuce, tomatoes, cheese, avocados and sour cream.
