Prep time: 15 minutes, Serves 4
2 Tbsp. Henry's olive oil
1 garlic bulb, peeled and crushed
1 bunch asparagus, loosely chopped (cut off hard ends)
1 yellow pepper, sliced lengthwise into strips
1 red pepper, sliced lengthwise into strips
1 red onion, peeled and sliced lengthwise into strips
1 Tbsp. parsley
1 Tbsp. basil
Heat oil in large pan over medium high heat. Once hot, add garlic and mix around until fragrant, but do not burn. Then add all the vegetables and turn heat down to medium and cook for 10 minutes or until vegetables are tender, stirring consistently to prevent burning. Lastly, sprinkle herbs evenly over vegetables. Serve hot.
