Simply Super Bean Burritos

Looking for a quick and easy meal your whole family will love? Try these tasty burritos and your loved ones will surely shout, "ole!"
Prep time: 45 minutes, Serves 4

Cilantro Lime Brown Rice

Makes 3 cups

1 cup organic brown rice, rinsed
2 1/2 cups water
1 tsp. salt
juice of a lime
4 Tbsp. cilantro, finely diced

Combine rice and salt in 3-quart saucepan and bring to a boil. Stir, cover, reduce heat and simmer for about 45 to 50 minutes or until tender. Add the lime juice and cilantro and mix thoroughly. Add more salt to taste.

Caribbean Orange-Infused Black Beans

1 Tbsp. Organic Olive Oil
2 cloves garlic, minced
1 (15 oz) can Organic Black Beans
1/4 tsp. cayenne pepper (to taste)
4 Tbsp. cilantro, diced
1/2 cup Natural or Organic Orange Juice

Heat a small saucepan over medium heat. Add the olive oil and garlic. Sauté the garlic for about 30 seconds. Add the beans, cayenne pepper, cilantro and orange juice, mix well and simmer for about 5 to 10 minutes or until the orange juice is absorbed.

Burritos

4 Organic Whole Wheat Tortillas
Cilantro lime brown rice
Caribbean orange-infused black beans
Salsa
1 avocado, sliced
2 cups romaine lettuce, sliced into strips

Take one tortilla and place a quarter-cup of rice down the center of the tortilla. Place a couple tablespoons of beans over the rice, add a dollop of salsa, lettuce and a couple of slices of avocado, fold up the bottom end of the tortilla, fold in the sides and enjoy.
