2 lb. organic Yukon Gold or red potatoes, peeled
2 c. Henry's Whole Milk
1 c. organic heavy cream
1 tsp. sea salt
2 cloves garlic, peeled and smashed
1 tsp. thyme
1/2 tsp. freshly cracked black pepper
1 c. smoked Gouda, shredded
Preheat oven to 400°F. Cut potatoes with a knife, mandolin or food processor into 1/8 inch slices. Place potatoes, milk, cream, garlic, salt, garlic, thyme and pepper in saucepan. Heat to just boiling- stirring occasionally. Pour half the mixture into a 3 qt. baking dish. Sprinkle with half the cheese. Add the rest of the potatoes and sprinkle with the rest of the cheese. Bake for about 40 minutes, until the potatoes are tender. Allow to rest for 15 minutes before serving.
