Smokey Cheddar and Amber Ale Fondue

Sipping Tips: Wash down this hearty fondue with its namesake: ice-cold amber ale. Medium-bodied and full of flavor, its effervescence and “hoppy-ness” pairs perfectly with creamy, smoky cheese.
1 clove garlic, peeled and slice in half
1 1/2 c. amber ale
3/4 lb. Cheddar Cheese, shredded
1/4 lb. smoked cheddar cheese
1 Tbsp. cornstarch
1 tsp. Henry's Dijon Mustard

Rub garlic clove over the inside of a heavy-bottomed saucepan. Pour in beer and heat over medium heat to a simmer. Place shredded cheese in a bowl and sprinkle with cornstarch. Toss to coat evenly. Gradually add cheese to the beer, in 3 to 4 batches. Add mustard and continue stirring until smooth, about 5 minutes. Remove from heat, place in fondue pot and serve with your choice of dippables.
