Smokey Chipotle Collard Greens

Total Time: 1 hour
Serves: 4

1 quart water
2 dried chipotle peppers or 2 Tbs. chipotle purée
2 lbs. stemmed and rinsed collard greens
1 Tbsp. honey
salt and pepper to taste
1/3 c. crumbled cojita or queso fresco cheese

Bring water to a boil. Add chipotle peppers and simmer for 15 minutes. Add honey, salt and greens. Cover and cook for 45 minutes, stirring often. The chipotles can be removed at any time when the desired level of heat is achieved. Add salt and pepper to taste. Serve greens immediately topped with crumbled Mexican-style cheese.
