Sparkling Pink Grapefruit Mojito

Add some Cuban coolness to your next summertime party. Cool mint, tangy grapefruit and a little sunshine combine for thirst-quenching refreshment. Make enough to share, as this drink is sure to be the hit of the party!
Total Time: 15 minutes, plus time to chill simple syrup
Serves: 1

Minted Simple Syrup
1 c. sugar
1 c. water
1 1/2 c. mint leaves, chopped

Bring sugar, water and mint to a boil on a saucepan. Turn down to a simmer and cook for 2 minutes, until sugar dissolves. Strain, allow to cool and store in refrigerator for up to two weeks.

Mojito
6 fresh mint leaves
juice of half a lime
ice cubes
1.5 oz. rum, light or dark
1 tbsp. minted simple syrup
7 oz. Henry's Italian Sparkling Pink Grapefruit Soda, chilled

Crush mint leaves in a tall cocktail glass. Add lime juice and ice. Pour in rum, simple syrup and Italian soda. Stir well. Garnish with lime or grapefruit wedge and a sprig of mint.
