Prep Time: 15 minutes, Cook Time: 20 minutes, Serves: 6-8
2 lbs. organic sweet potatoes, peeled
1 tsp. salt
1/4 c. maple syrup
3 Tbsp. Henry's Unsalted Butter
2 tsp. freshly grated ginger
2 tsp. ground cinnamon
1 tsp ground nutmeg
1/2 tsp. ground cloves
1/2 tsp. ground cardamom
1/4 c. Henry's Milk
Cut potatoes into 1-inch chunks. Place potatoes and salt in a large saucepan and cover with cold water. Cover and bring to a boil. Turn heat down to a simmer, and cook for 20 minutes, or until the potatoes are tender. Drain potatoes. Run potatoes through a food mill, ricer or mash with a potato masher. Return mashed potatoes to saucepan. Turn heat to low, stir in syrup, butter, ginger, cinnamon, nutmeg, cloves, cardamom and milk. Serve warm.
