5 slices Henry's Market Bacon
1/2 c. diced onion
2 cloves garlic, minced
1 (10 oz.) bag baby spinach, chopped
5 Henry's Large Egg Whites
3 Henry's Large Eggs
1/3 c. Henry's Milk
1 tsp. baking powder
salt and black pepper to taste
1/2 c. brie, chopped without the rind
Preheat oven to 375°F. Spray regular muffin pan with cooking spray. Heat a sauté pan over medium heat. Cook bacon until browned and crisp. Set aside on paper towels. Drain drippings from pan. Add onions and garlic. Cook 3 minutes over medium heat, until soft. Add spinach. Cook 2 minutes, until wilted. Add a little water if the pan is too dry. Crumble bacon and mix in with spinach, set aside. In a separate bowl, whisk eggs with milk, baking powder, salt and pepper. Stir in vegetables and cheese. Divide egg mixture evenly between muffin cups. Bake 20 to 25 minutes, until golden brown and firm to the touch.
