Tacos are arguably the best known of all Mexican culinary inventions. I think tacos are perfect summer party food. They’re comfortable because you eat them with your hands, they’re full of lively flavors, and they’re welcoming, because each guest can fill and sauce them to his or her own liking. So having a taquisa, a taco party, is an enjoyable way to entertain casually.
Tacos in Mexico are as much about tortillas as they are about filling, an approach that keeps everything in good nutritional balance. Search out the freshest tortillas available. Plan on 5 to 8 tortillas per person if your taco party is for dinner.
I think four is the perfect number of different taco fillings for a party of four to six guests. Figure about 2 cups of each filling to ensure that your guests can have one or two tacos of each flavor with the appropriate scant 1/4 cup of filling in each taco.
Plan a nice variety of fillings, starting with vegetable dishes made from the best locally grown ingredients.
For drinks, consider the legendary margarita offered to each guest as they arrive. A variety of beers would be welcome, too, from light brews to the richer Bohemia. For nonalcoholic alternatives, think of homemade limeade or iced tea. Other elements I’d offer at a taquisa include brothy beans. And of course, plenty of salsa.
