What’s so super about this burger?

Turkey: Ninety-nine percent fat free and high in protein, turkey provides all of the essential amino acids. Turkey is also an excellent source of iron, zinc, phosphorus, potassium and B vitamins.

Wheat germ: It’s the “heart” of the wheat kernel - a concentrated source of several essential nutrients including Vitamin E, folate (folic acid), phosphorous, thiamin, zinc and magnesium.

Omega-3 Egg: Omega-3 enriched eggs have high level of alpha-linolenic acid which supports a healthy heart function and overall wellness.

Chili pepper: Peppers not only add heat to a meal, studies show they are a good source of vitamins A and C, which helps boost immunity. Peppers are also a good source of capsaicin which is shown to reduce joint pain.

Organic Ketchup: Studies show that organic ketchup provides three times as much of the cancer-fighting carotenoid, lycopene, as non-organic brands. Lycopene is a powerful antioxidant that has been shown to help protect against many type of cancer, including prostate, breast, pancreatic and intestinal cancers, especially when paired with monounsaturated fat-rich foods, such as avocado, olive oil or nuts.

Edamame: Just one cup of edamame provides over 50% of the Daily Value (DV) for protein with less than 300 calories and only 2.2 grams of fat. Studies show that soy products lower cholesterol levels, as well as provide a good source of easily assimilated iron and essential fatty acids.

Avocado: Rich in vitamin K and soluble fiber, avocados are a great way to add delicious nutrition to your plate. Studies show that avocados help to lower “bad” cholesterol, inhibit cancer growth and help assimilate fat soluble arytenoids into your system.

Citrus: Limes are rich in vitamin C, one of the most powerful antioxidants. Vitamin C is shown to neutralize free radicals which can damage healthy cells and cause painful inflammation. Vitamin C is also essential for a healthy immune system.

Garlic: Studies show that garlic may help lower blood pressure, thins blood (reducing potential clots), reduce triglycerides and lowers LDL cholesterol and raises HDL cholesterol. All of which support healthy cardiovascular function, reducing the risk for heart attack and stroke.

Beans: Packed full of fiber and loaded with antioxidants, beans are a great source of lean, vegetable protein. Just one cup of black beans provides 15 grams of protein (30% of the daily value for protein), plus 74.8% of the daily value for fiber with only 227 calories with almost no fat.
Super South-of-the-Border Turkey Burgers
Prep Time: 10 minutes, plus time to chill, Cook Time: 12 minutes, Makes: 4 patties

1 lb. ground all-natural turkey (white meat)
1/4 c. Henry's Yellow Corn Tortilla Chips, crushed
2 tbsp. wheat germ
Henry's Fat Free Milk
1 Henry's Omega-3 Large Egg, beaten
1 tsp. garlic powder or 2 cloves fresh garlic, minced
1 tsp. chili powder
1/2 tsp. cumin
1/2 tsp. oregano
hot sauce to taste
sea salt and cracked black pepper to taste
Henry's Canola or Grapeseed Oil
4 Henry's Whole Wheat Buns
Chipotle Ketchup (see recipe below)
Edamame Guacamole (see recipe below)
Black Bean and Corn Salsa (see recipe below)

Place tortilla chips and wheat germ in a bowl. Stir in egg and just enough milk to moisten the chips and wheat germ. Add turkey, spices and salt and pepper to taste. Mix well. Divide mixture into four equal portions and form into patties, about one-inch thick. Place on a cookie sheet, cover and refrigerate for one hour. In the meantime, make the edamame guacamole and black bean salad. Heat grill to medium high heat. Lightly brush grill with oil. Grill burgers until browned on both sides, about 5 to 6 minutes a side. Grill buns about 1 minute before the burgers are done. Top each burger with chipotle ketchup, guacamole and black bean and corn salad.

Chipotle Ketchup
Prep Time: 5 minutes, Makes: One cup

1 c. Henry's Market Organic Ketchup
1 tbsp. organic clover honey
juice of one lime
1 to 2 tbsp. chipotle peppers in adobo sauce, chopped
1/2 tsp. ground cumin
Mix all the ingredients together, until smooth.

Edamame Guacamole
Prep Time: 15 minutes, Makes: 2 1/2 cups

1 c. shelled edamame, cooked according to package
2 organic ripe avocados, peeled, pitted and chopped
2 to 3 cloves garlic, minced
juice of one lime
2 tbsp. organic red onion, finely minced
sea salt to taste
hot sauce to taste

Remove translucent “shell” from edamame. Combine edamame, avocado, garlic lime and onion in food processor. Pulse until just smooth. Add salt and hot sauce to taste. Cover with plastic wrap and chill until needed.

TIP: Place pits in guacamole until ready to serve to keep dip from turning brown. Also, when covering with plastic wrap, press wrap firmly on top of the guacamole, this also helps to keep dip from turning brown.

Black Bean and Fresh Corn Salsa
Prep Time: 10 minutes, Makes: 2 cups

1 c. Henry's Black Beans, drained and rinsed 1/2 c. fresh corn kernels (about one ear)
1 organic red pepper, diced
1/2 bunch cilantro, chopped
3 tbsp. organic red onion, diced
1 clove garlic, minced
1/4 c. Henry's Market Salsa
1 tbsp. Henry's Market Canola or Grapeseed Oil
juice of one lime
sea salt to taste

Mix all ingredients together. Add salt to taste. Refrigerate until ready to serve.
