Toasted Barley and Spinach Pilaf

Prep Time: 10 minutes, Cook Time: 60 minutes, Serves 6 to 8

3 Tbsp. Henry's Organic Unsalted Butter or dairy-free alternative
1 c. organic pearl barley
1/2 c. red onion, finely chopped
1 clove garlic, minced
6 oz. organic mushrooms, chopped
3 c. organic vegetable broth
Salt and pepper to taste
8 oz. organic baby spinach
1/4 c. pecans, toasted and chopped

Melt butter or margarine in a large saucepan. Stir in barley, cook for 1 minute. Add onion, garlic and mushrooms. Cook for about 5 minutes. Add broth and bring to a boil. Cover and reduce heat to medium-low and simmer 45 to 55 minutes or until liquid is absorbed and barley is tender. Or place in covered casserole and bake at 350° F for 40 minutes. Stir in spinach 4 minutes before barley is done. Add salt and pepper to taste. Top with toasted pecans and serve.
