Prep time: 15 minutes, Marinade time: overnight, Makes enough for 20 lbs of meat
1 red onion, sliced
1 bulb garlic, crushed
4 tsp. each salt and white pepper
4 tsp. black pepper
4 tsp. paprika
3 tsp. basil
4 tsp. Worchestershire sauce
1 cup lemon juice
1/3 quart red wine vinegar
1 quart olive oil
Mix all ingredients until well blended. Pour over meat and let marinate overnight. Tip: Place your meat in a large, gallon-size plastic zip-lock bag and then cover with marinade and seal. This not only will travel well in coolers for camping trips, but is also less cumbersome than using a pan. Flip the bag over several times to marinate the meat evenly.
