Veggie and Goat Cheese Quesadilla

1 oz. goat cheese, crumbled
1 Henry's Tortilla
1 Tbsp. Henry's Frozen Supersweet Corn, thawed
1/4 c. roasted red pepper, chopped
1-1/2 Tbsp. Henry's Black Beans, canned, drained and rinsed
1 Tbsp. organic cilantro, chopped
non-stick cooking spray
1/4 c. Henry's Fresh Salsa

Spray sauté pan with cooking spray. Heat pan over medium heat. Place tortilla in pan. Crumble goat cheese over half the tortilla. Top with corn, red pepper, black beans and cilantro. Fold tortilla in half. Cook 2 minutes per side. Enjoy topped with salsa.
