Prep Time: 25 minutes, Cook Time: 20 minutes, Makes: 6 rolls
1 organic cucumber, peeled, seeded and thinly sliced
1/2 c. organic bean sprouts
6 leaves organic green leaf lettuce, cut to fit wrappers
18 organic cilantro stems
12 mint leaves
12 basil leaves
12 Extra Large Shrimp, steamed, peeled and sliced in half
1 oz. package rice vermicelli noodles
1 package rice paper wrappers (translucent, brittle rice paper discs)
Bring 3 cups water to a boil in a medium saucepan. Add vermicelli noodles and cook for 3 to 4 minutes, until soft. Drain, rinse under cold water and set aside. Place all ingredients in separate bowls, or in mounds on a large platter for easy assembly. Fill a large bowl with very warm tap water. Immerse one rice paper wrapper in water, until soft and pliable (about 30 seconds). Place on dry cutting board. Let sit for one minute. Place one lettuce leaf about a third of the way up from the bottom of the wrapper and top with a small amount of vermicelli and bean sprouts, a couple of cucumber sticks, 3 sprigs cilantro and 2 basil leaves. Fold in sides over the filling and roll until a third of the wrapper is left. Place 3 shrimp halves and 2 mint leaves on the last third of the wrapper. Moisten the end on the wrapper with some warm water top help seal the roll. Carefully finish rolling wrapper. Repeat until all the ingredients are “rolled up.” Serve immediately with peanut dipping sauce.
Peanut Sauce
Prep Time: 5 minutes, Cook Time: 3 minutes, Makes: About one cup
1/2 c. Henry's Creamy Peanut Butter
1/4 to 1/2 c. water (to desired consistency)
1 tbsp. organic tamari (San J is a good wheat-free alternative)
1 Tbsp. Vietnamese fish sauce
2 Tbsp. molasses
1/4 c. white vinegar
Fresh hot pepper (Thai chili, jalapeno), diced (to taste)
1 tsp. organic fresh ginger, peeled and minced
2 tbsp. organic brown sugar (to taste)
1 tbsp. organic roasted, salted peanuts, crushed
Heat peanut butter and water in a saucepan. Stir until creamy. Stir in the rest of the ingredients. Simmer for about 1 minute. Pour into bowls and garnish with crushed peanuts.
