Note: This recipe involves 20 hours of soaking time.
Serves 6

2 c. organic oat groats

Place oats in a bowl and cover with water. Soak 10 hours, then drain and rinse. Cover with fresh water and soak 10 more hours. Drain, rinse and store in a covered container in the refrigerator for up to 3 days.

1 organic apple or ripe organic pear, peeled, cored and chopped 2 Tbsp. raw organic sunflower seeds 2 Tbs. raw organic honey 1 tsp. organic cinnamon Sea salt to taste

Place soaked oat groats in food processor with apple, sunflower seeds, honey and cinnamon. Pulse until fairly smooth. Add salt to taste. Serve at room temperature or lightly warmed with almond milk and apricot purée.

Dried Apricot Purée
Total Time: 10 minutes, plus time to soak
Makes about 1 1/2 cups

1 1/2 c. dried organic apricots
1 tsp. organic cinnamon (optional)
1 Tbs. raw organic honey (optional)

Soak apricots in warm water for 2 hours. Purée in a food processor, adding soaking water to reach desired consistency. Refrigerate for up to one week.

Almond Milk
Makes 4 cups

3 c. organic raw almonds
4 c. water
3 organic dates, pitted or 2 Tbsp. raw organic honey
2 tsp. organic vanilla extract (optional)

Soak almonds in water overnight. Place soaked almonds in blender with water and dates. Liquefy. Strain mixture through a fine mesh strainer or cheesecloth. Discard pulp, or keep and use for savory nut pâté. Add vanilla, if desired. Refrigerate milk and use within 5 days.
