Wild Rice Mango Salad

Serves 4 to 6

2 3/4 c. water
1 1/2 c. wild rice
1 tsp. salt
2 ripe mangoes, peeled and diced
1 medium red bell pepper, diced
1/4 c. red onion, diced
1/4 c. cilantro, chopped
1/2 c. shelled pistachios, coarsely chopped

Dressing
1/4 c. Henry’s Orange Juice
3 Tbsp. Henry’s Extra Virgin Olive Oil
1 1/2 Tbsp. apple cider vinegar
1 1/2 tsp. ground cumin
1 clove garlic, minced
Black pepper and salt to taste

Rinse rice until water runs clear. 2 ˝ - 3 quart heavy saucepan, bring water, rice and salt to boil. Boil uncovered without stirring for 5 minutes. Reduce heat to low, cover and simmer for 15 to 20 minutes, until rice is chewy. Remove pan from heat and let rice stand, covered for 5 minutes. Fluff rice with fork and put in a large bowl. Let chill for 10 minutes. Stir mangoes, red pepper, onion, cilantro and pistachios to the rice. In small bowl, whisk together dressing ingredients. Pour dressing over rice mixture and toss.
