Zesty Black Bean Pinwheels

Put a spin on lunch with these zesty south-of-the-border pinwheel sandwiches. Experiment with your favorite meats, cheeses and veggies to discover your favorite combination.
Prep Time: 15 minutes, Serves 6

6 (10 in.) Henry's Whole-Wheat Tortillas
1 (8 oz.) package cream cheese, softened
1/2 c. salsa
1 c. black beans, drained and rinsed
1 tomato, diced
1 c. cheddar cheese, shredded
1/4 c. pitted black olives, diced
6 leaves red leaf lettuce, rinsed
24 toothpicks

Mix cream cheese with salsa in a small bowl. Spread each tortilla lightly with cream cheese. Sprinkle with beans, tomatoes cheese and olives. Add a lettuce leaf across the center of each tortilla leaving some of the frilly leaf edge hanging out. Starting at one end roll up each tortilla --tightly. Stick toothpicks in four evenly spaced spots of the tortilla Place tortilla in a dish, cover, and refrigerate for 2 hours. Slice each roll into four pieces.
