Prep Time: 10 minutes. Cook Time: 40 minutes, Serves 4
1 pound package frozen vegetarian meatballs
2 Tbsp. olive oil
2 cloves garlic, minced
1/2 tsp red pepper flakes
1 Tbsp basil
1 Tbsp oregano
1 jar (24 ounces) Organic Marinara Pasta Sauce
1/4 cup Parmesan cheese, grated
8 slices Provolone Cheese
4 (6-inch) Sandwich Baguettes
Bake vegetarian meatballs according to the package. While the meatballs are baking, sauté garlic and red pepper flakes. Add the marinara, basil and oregano. Place 3 to 4 meatballs in each baguette, cover with sauce, sprinkle with Parmesan, and 2 slices of cheese. Turn broiler on high. Place sandwiches on cookie sheet and place under broiler for about 1 minute or until the cheese is bubbling.
