1 1/2 cups unbleached, organic flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tbsp cinnamon
1 tsp nutmeg
1/2 cup maple syrup
1/4 cup vanilla yogurt
1 cup zucchini, grated
2 egg whites, whipped until firm
Preheat oven to 350°F. Grease and flour a loaf pan. Combine flour, baking soda, baking powder, salt, cinnamon and nutmeg in a bowl. Stir in syrup, yogurt and squash. Fold in egg whites. Pour batter into pan. Bake for 60 minutes.
