Nutritionally, quinoa (pronounced keen’ wa) might be considered a supergrain. This ancient Incan grain contains an ideal quality protein (50% more than wheat) and more iron, phosphorus, vitamins A, E and B, and more calcium and fat than other grains.
Quinoa grains are about the same size as millet, but flattened, with a pointed, oval shape. The color ranges from pale yellow through red and brown to black. Quinoa cooks quickly to a light, fluffy texture and a mild, delicate, slightly nutty flavor. As it cooks, the external germ, which forms a band around each grain, spirals out, forming a tiny crescent-shaped "tail," similar to a bean sprout. Although the grain itself is soft and creamy, the tail is crunchy, providing a unique texture to complement quinoa's delicate flavor.
Quinoa is gluten-free which makes this a nutritious and flavorful alternative for those with gluten sensitivity. Quinoa would be a worthy addition to anyone's diet, supplying variety, as well as good nutrition.
Cooking Quinoa
Quinoa kernels have a waxy protective coating called saponin, which will leave quinoa bitter unless rinsed off under running water before cooking.
Quinoa quadruples in size upon cooking, something to take into consideration as you're measuring out the grain. In a pot, bring water to a boil, add quinoa and return to a boil. Then reduce heat and simmer, covered tightly until done. Resist the urge to lift the cover - the momentum of the steam will be lost. Use broth or fruit juice instead of water for flavoring fun. After about 20 minutes (or the water has been absorbed) test the quinoa for doneness - it should be slightly chewy. Remove from heat and gently lift and separate grains with a fork. Re-cover and allow to sit for 5-10 minutes before serving.
