Prep Time: 40 minutes, Cook Time: 25 minutes plus 3 hours of rise time, Serves 10
2 sweet potatoes
1 (.25 ounce) package active dry yeast
1/2 cup warm water (110 degrees F)
5 Tbsp brown sugar
zest of one orange
4 Tbsp butter, softened
1 tsp salt
2 eggs, slightly beaten
3 cups unbleached organic flour plus 1/2 cup for kneading
Peel and cut sweet potatoes into small chunks. Place in a saucepan, cover with water and bring to a boil. Simmer until very soft (about 10 minutes). Drain and mash until smooth.
In a large bowl, dissolve the yeast in the water. Stir in a tablespoon of sugar and let sit for 5 minutes. Add the sweet potatoes, orange zest, butter, salt, eggs and the rest of the sugar. Mix well. Mix in flour and place dough onto a lightly floured surface. Knead for 3 to 4 minutes, adding enough flour to prevent sticking. Form into a ball and place in an oiled bowl. Cover and let rise for 1 1/2 hours or until doubled in size. Punch down and let rest for 3 minutes. Shape into 20 balls and place in a buttered baking pan/sheet. Cover and allow to rise until doubled in size. Bake at 375 degrees F for 15 minutes. Serve hot with cinnamon orange honey butter.
Cinnamon Orange Honey Butter
2 sticks unsalted butter, softened
3 Tbsp cinnamon
1/8 cup honey
Juice of one orange
In a small bowl mix all the ingredients together. Shape into a ball and place in a decorative bowl.
