Oatmeal Bars

Here's a bar that as easy to make as it is delicious. The perfect grab and go snack or breakfast, these oatmeal squares are packed with energy. Great for packing in a school lunch, too!

Prep time: 15 minutes, Bake time: 20 minutes

1 cup chopped dates
1/2 c. water
4 Tbsp. sugar
2 Tbsp. honey
1/4 c. fruit spread (raspberry, blueberry, strawberry)
2 c. quick-cooking oats
1 c. all-purpose flour or whole-wheat flour
1 c. packed brown sugar
1 scoop whey protein (about 30 grams)
1/2 tsp baking soda
1/4 tsp salt
1/2 c. butter
2 Tbsp. olive oil
1 egg white

In small pan, combine dates, water, sugar, honey and cook until it comes to a boil. Reduce heat and simmer, uncovered, for 5 minutes or until mixture is smooth and thickened, stirring constantly. Remove from heat and add fruit spread.

In large bowl, combine oats, flour, brown sugar, whey, baking soda and salt. Stir in butter, olive oil and egg white. Place half the mixture in a 8 x 11" baking dish coated with nonstick cooking spray. Spread date mixture over oats. Gently pat remaining oats on top. Bake at 350º for 20 minutes or until lightly brown. Cool and cut into bars.

The oat mixture should be on the dry side. If needed, add a teaspoon at a time of olive oil to help moisten.
