Traditional meatloaf is made with ground beef and often a combination of beef, pork and veal. To give Mom’s Meatloaf a slimming makeover we decided to use buffalo instead of ground beef. With only 4 grams of fat per serving and the same meaty flavor as hamburger, buffalo is a great alternative in meatloaf, meatballs and burgers alike. Although it’s this same low-fat profile that poses a problem when it comes to juiciness. To compensate for the missing fat, we added a layer of moist spinach and sautéed vegetables for taste and visual appeal. All of our tricks and swaps reduced saturated fat from 6 grams to 1.5 grams, total fat from 17 grams to 6 grams, cholesterol from 90 milligrams to 17 milligrams and overall calories from 270 to 200.

Serves 6
2 slices Whole Wheat Bread, crumbled
1/4 c. Henry's Fat Free Milk
2 tsp. Henry's Extra Virgin Olive Oil
1/4 c. organic onion, minced
3 cloves garlic, minced
1/2 c. organic celery, chopped
1 (10 oz.) package frozen spinach, thawed and drained
sea salt and pepper to taste
1 lb. ground buffalo
2 Tbsp. Worcestershire sauce
2 tsp. Henry's Dijon Mustard
1/4 c. Henry's Ketchup
1 Henry's Large Egg
Place bread and milk in a bowl. Let sit for 5 minutes. Heat olive oil in a large skillet. Add onion, garlic and celery. Sauté until soft. Stir in spinach, cook for a minute. Season with salt and pepper. Set aside. Stir buffalo, Worcestershire, mustard, two tablespoons ketchup, egg, salt and pepper into the bread and milk mixture. Place two-thirds the buffalo mixture into a loaf pan. Spread spinach mixture over the buffalo. Top with remaining buffalo. Bake for one hour. Fifteen minutes before the meatloaf is done, spread with remaining ketchup.
