Creamy comfort food doesn’t have to be laden with saturated fat as shown with our Beef Stroganoff recipe re-do. Traditional beef stroganoff calls for ground beef and canned mushroom soup which add high amounts of fat, sodium and calories. Unfortunately, they also add flavor. To compensate for the loss of flavor, we used garlic, thyme, marjoram and vegetable broth to create our sauce base. An exotic mix of mushrooms and fresh chives add deep earthy flavor punctuated by piquant onion taste. We swapped ground beef for chunks of lean natural sirloin, which also added texture to our stroganoff. Three-quarters of a cup of light sour cream adds the same creaminess as one-cup of full-fat sour cream with a fat and calorie savings that’s imperceptible to our taste buds.

All of our tricks and swaps reduced saturated fat from 16 grams to 4.5 grams, total fat from 43 grams to 11 grams and overall calories from 720 to 400. Now you can feel good about enjoying the leftovers for lunch!

Serves 6

2 tsp. Henry's Canola Oil
1 lb. natural sirloin, cut into 1-inch cubes
1 Tbsp. Henry's Unsalted Butter
1 c. organic yellow onion, minced
2 cloves garlic, minced
4 c. organic mushrooms, sliced (button, crimini, portobello, shitake)
sea salt and pepper to taste
2 tsp. thyme
1 tsp. marjoram
1 Tbsp. unbleached organic flour
2 c. vegetable or mushroom broth
1/3 c. red wine
3/4 c. light organic sour cream
12 oz. yolk-less egg noodles, cooked
1/4 c. chives, diced

Heat oil in a large skillet over medium-high heat. Brown beef, remove from pan and drain on a plate covered with a paper towel. Melt butter in the same pan. Add onions and garlic. Cook for 5 minutes, or until soft. Add mushrooms, salt, pepper, thyme, marjoram. Stir in flour, add broth, red wine and beef. Bring to a simmer, cook until thickened. Stir in sour cream, cook until heated through. Serve over noodles garnished with chives.
